4 Ingredient Christmas Cake

 Bin Inn Christmas Cake

INGREDIENTS

  • 1kg Fruit Mix
  • 2 Cups (500ml) Fruit Juice or Cold Tea Drink
  • 2 Cups Self Raising Flour
  • 1 Tbsp Sherry (optional)

INSTRUCTIONS

  1. Preheat oven to 130C.
  2. Soak fruit mix in juice and sherry (optional) or in cold tea for 2 hours or preferably overnight.
  3. Stir self raising flour into soaked fruit and mix well.
  4. Spoon mixture into a large baking tin lined with baking paper.
  5. Place tin in the bottom of the oven
  6. Bake for 90 minutes.
  7. Remove and leave to cool.
  8. Store in a tin or wrap in tin foil.
  9. Cut in 3-4 days and enjoy.
