Cherie’s Marry Me Chicken

 Bin Inn Cherries Marry Me chicken

INGREDIENTS

  • 500g boneless skinless chicken thigh
  • ½ cup flour
  • 1tsp Pepper & Me Man Grind
  • 50g butter
  • 6 cloves garlic, sliced
  • ½ cup sliced sundried tomatoes
  • 2 cups chicken stock
  • 1½ cups cream
  • 2tsp Pepper & Me Italian Stallion
  • 100g Parmesan
  • Pepper on Me
  • Oil
  • Basil to garnish

INSTRUCTIONS

  1. Lightly pound the chicken thighs to an even thickness and cut in half
  2. Season the flour with Man Grind and coat the chicken in the seasoned flour
  3. Add a drizzle of oil to a pan over a medium high heat and sear the chicken for about 2 minutes each side to brown. Once brown set aside
  4. Take a large shallow casserole or a deep fry pan and add the butter, melt over a medium high heat before adding all of the garlic , saute until fragrant
  5. Next add the sliced sundried tomatoes and saute for another minute before pouring in the chicken stock and simmering for 5 minutes to reduce slightly
  6. Add the cream and return the chicken to the pan, season with Italian Stallion and simmer for 5 minutes over a medium heat
  7. Add fresh cracked pepper to taste and stir through parmesan. Serve over mashed potato or pasta
  8. Garnish with fresh basil
